Roasted Cauliflower & Potato Curry Soup

In this healthy cauliflower soup recipe, roasting the cauliflower first adds depth and prevents the florets from turning to mush. A little tomato sauce and coconut milk give the broth a rich, silky texture. Serve with a dollop of sour cream or yogurt, if desired.

  • Preheat oven to 450 degrees F.

  • Combine coriander, cumin, cinnamon, turmeric, salt, pepper and cayenne in a small bowl. Toss cauliflower with 1 tablespoon oil in a large bowl, sprinkle with 1 tablespoon of the spice mixture and toss again. Spread in a single layer on a rimmed baking sheet. Roast the cauliflower until the edges are browned, 15 to 20 minutes. Set aside.

  • Meanwhile, heat the remaining 1 tablespoon oil in a large pot over medium-high heat. Add onion and carrot and cook, stirring often, until starting to brown, 3 to 4 minutes. Reduce heat to medium and continue cooking, stirring often, until the onion is soft, 3 to 4 minutes. Add garlic, ginger, chile and the remaining spice mixture. Cook, stirring, for 1 minute more.

  • Stir in tomato sauce, scraping up any browned bits, and simmer for 1 minute. Add broth, potatoes, sweet potatoes, lime zest and juice. Cover and bring to a boil over high heat. Reduce heat to maintain a gentle simmer and cook, partially covered and stirring occasionally, until the vegetables are tender, 35 to 40 minutes.

  • Stir in coconut milk and the roasted cauliflower. Return to a simmer to heat through. Serve garnished with cilantro and chiles, if desired.

Seven Immune System Hacks for the Fall Season

  1. Love (opposite: fear or hate)
    Love affects our physiology and our resilience.  Love actually changes the way our heart beats, lowers cortisol, improves immune dysfunction.  Love feeds our bodies in a way God intended (and instructs us).

  2. Sleep (opposite:  striving)
    In order to sleep, we need to surrender.  Surrender means to “let go,” relax, be quiet.  Sleep will refresh us to begin again the next day.  Sleep needs to be a priority too for healing.

    Be still.  God ministers to us in our stillness.  We rest in Him.  Psalm 46:10

  3. Clean water (opposite:  soft drink, sugary drinks)
    Keep a water bottle with you always, preferably not plastic.  Gauge your intake daily and aim to consume half your body weight (in ounces).  Our bodies require a lot of water daily.  Use a filter for best results.

    Sugary drinks will give you a lift, but you will also feel the crash afterwards.

  4. Vitamins and minerals (opposite:  none)
    We need vitamin supplements because we will not get enough from our food sources.
    Vitamins B, C, D are probably the best vitamin choices for the fall season.  Vitamin B helps with energy, nerve health, and brain function.  Vitamin C is good for our immune health, cell repair, and more.  Vitamin D (powerhouse vitamin) strengthens our immune health and helps with weight loss and mood regularity.  Zinc and magnesium are recommended minerals for the detox process and immune function.

  5. Eat clean and fast regularly (opposite: overeating & eating junk food)
    Clean means ORGANIC.  Eliminate processed foods.  If it’s in a package or if it’s preserved or if it has more than 5 ingredients, it’s not healthy, choose something better.  Eat fruits and vegetables, nuts and seeds, and clean proteins are good for our immune systems.

    Fasting allows us to rest our gut.  This allows our immune system to take a break from toxins that pass through the body even when we eat clean.  Fasting is good for us physically, emotionally and spiritually.

  6. Exercise wisely (opposite:  slothfulness)
    Pay attention to your body during a new season.  High stress life situations can be made worse from high intensity workouts.  It adds inflammation to the body.  Listen to what your body is telling you and adjust your workout accordingly.

    Exercise is necessary for our health (physically, mentally, spiritually, emotionally) but we need to pay attention to our bodies.

  7. Renew your mind
    Our minds and our bodies are tightly connected.  Our minds can direct our bodies and if they are out of alignment, it will affect our health.  Step away from things that fill your mind with toxins such as the daily news.

    Fill your mind with things that feed your soul in a way that encourages love, health and a spiritual relationship with God.

Childhood Cancer Awareness with Dr. Dagmara Beine

There is a big difference between BLAME and Awareness. Parents who live in this cancer world are aware – too aware of the pain, the worry and the statistics. Parents of children who do not have cancer are not aware- but they SHOULD BE because it is currently the number one cause of death by disease in children.

I wish I knew the Clomid I took to conceive her raised her chance of having leukemia. This is not blame – this is true awareness 95% of cancers are a mix of environmental factors with our epigenetics. So many but definitely not all – cancers can be prevented by making the BEST decisions for our children before ANY diagnosis enters your world. Our country allows MANY cancer causing ingredients into our food and our toiletries- start there- do not allow anything on or in your children that is cancer causing.
 
Roundup (Glyphosate) has now been proven to cause cancers, especially in kids. We have amazing epigenetic testing now that can educate us on our kids genetic hiccups so that we can make the best decisions for our kids in life. That is AWARENESS.

•2 cups baby arugula, organic
•½ cup shredded cooked chicken breast, organic
•½ cup fresh strawberries, sliced, organic

Red, White and Blue Summer Salad

Recipe Credit: Green Light Bites

Ingredients

3-4 cups of fresh romaine lettuce, organic, cleaned and torn (you can use the bagged lettuce)

About ½ cup fresh blueberries, organic

About ½ cup fresh strawberries, organic, cut into small chunks

1 oz. (28 g) crumbled feta cheese

1 tbsp dressing (recipe below)

Instructions

Wash and prepare all your ingredients.  Top the greens with the berries and cheese.

Drizzle on the dressing (recipe below)

 

Lemon Poppy Seed Dressing

¼ cup olive oil

¼ cup of lemon juice

2 tbsp honey

1 tsp Dijon mustard

1 tsp poppy seeds

½ tsp onion powder

¼ tsp kosher salt

¼ tsp fresh ground pepper

 

Whisk all ingredients together.

Red, White and Blue BERRY Smoothie

Ingredients

2 cups strawberries, frozen, organic

1 cup raspberries, frozen, organic

1 tablespoon honey

2 medium bananas, green-tipped, frozen

2 cups blueberries, frozen, organic

1 ¼ cups almond milk, unsweetened

2 tablespoons flaxseed, ground

Low glycemic fruits in this recipe, means lower sugar

Instructions

If you do not want the separate layers, just blend everything together at once in a high-powdered blender.

If you DO want to make the layers, start by blending the red layer ingredients together. Pour into individual glasses, about 1/3 full. Set glasses in freezer for 10 minutes.

Rinse out the blender jar to remove any remaining red layer mixture. Then, add your white layer ingredients.  Blend until smooth.  Pour the white layer over the frozen red layer, fulling about 2/3 full.  Set glasses back in the freezer for 15 minutes.

Rinse out the blender jar to remove any remaining white layer mixture.  Then add your blue layer ingredients.  Blend until smooth.  Pour the blue layer over the frozen white layer, filling to the top.

Serve with a straw.

 

RED: frozen organic strawberries, raspberries and a bit of honey (can use coconut water to loosen it if needed).

WHITE:  frozen bananas, unsweetened vanilla almond milk (but any milk will work) and a few ice cubes

BLUE:  frozen organic blueberries, unsweetened vanilla almond milk, and ground flax.

Meet Sonia Davis

I’m Sonia Davis. I’m 48, married to an incredible guy and have 2 beautiful children. In May of 2018 I was diagnosed with metastatic breast cancer (MBC) after having a clear 3D mammogram just 2 months prior. My Mom had died of ovarian cancer and because of this, I did a blood test (CA125) and pelvic ultrasound yearly. My blood test came back elevated and with my Mom’s history, it was determined that a full hysterectomy would hopefully prevent me from getting ovarian cancer. As it turned out, the pathology report stated that breast cancer cells were found in both ovaries, not ovarian. A PET/CT revealed that it had gone to both breasts, my pelvis, spine, ribs and adrenal glands. Talk about a shocker!!! I had stage IV cancer and felt fine.
A dear friend encouraged me to reach out to Believe Big! Ivelisse and her staff have been so supportive and informative. I really don’t think I would be alive today had it not been for their advice! I was awarded a grant that allowed me to go to Boulder, CO and meet with an integrative oncologist, Dr. Kirsten West. I received IV mistletoe, as well as subcutaneous mistletoe, and IV Vitamin C. The supplements and diet changes have allowed me to be a Mom and feel good despite 2.5 years of battling this disease. People can’t even believe I have cancer!!
I have a very restrictive diet (no gluten, no refined sugar, no dairy), but I feel better than I’ve felt in years!  I continue to do subcutaneous mistletoe and IV Vitamin C. This year I went to California after my cancer had progressed again.  I received hyperthermia treatment 6 days a week for 6 weeks to my liver and areas on my spine.  HCI (Hyperthermia Cancer Institute) was incredible.  I had caring nurses and doctors who would heat up those areas to 109 degrees.  I received chemotherapy while I was out there as well as hyperbaric oxygen.  I have had 2 great scans since!  Hallelujah! Jill’s Inspirational Story

I was 37, healthy, exercising daily, eating well, and never smoked a cigarette in my life. What started out as a small lingering cough, turned into two misdiagnoses of pneumonia over the course of many months. Then, on August 17, 2019, I received the news that changed my life forever. There was a tumor, a mass, it was cancer – in my lungs and was spreading. I was diagnosed with Stage IV non-small cell lung cancer (NSCLC). My treatment plan was a targeted therapy pill called Tagrisso and I successfully showed amazing results with that until May 2020 (just nine months later).

It started with wheezing and then my CT scan said it all – progress on the lymph nodes, two new masses. A new bronchoscopy biopsy confirmed it was Small Cell Lung Cancer (SC).

What? Somehow, I had developed both NSCLC and LC, but I soon learned it’s a growing reality. “Small Cell Transformation” is happening to NSCLC patients and I’m finding more and more of us. It’s super rare – with less than 5% of NSCLC patients experiencing this. And because of that, there is no ‘set’ regime or protocol from the medical clinicians. I stopped Tagrisso in May 2020 and I started chemotherapy immediately.

I lost my hair, I sought alternative therapies, have been growing spiritually and the breakthroughs are simply incredible. I found Believe Big and mistletoe therapy one month into chemo and had amazing results through it all. I’m grateful for their willingness to accept me into their program so quickly. I was amazed at my experiences in their clinics during COVID, the email support and words of encouragement I received along the way. I’ve also made some incredible personal friends now as a result and for that human connection alone, I am so grateful.

Micah’s Inspirational Story

In December of 2019, Micah was diagnosed with stage four adrenal cortical carcinoma, a very rare and aggressive cancer. It’s not typically seen in children.

In the beginning without a diagnosis our surgeon felt it was important to remove it. We agreed. After an intense surgery, and waiting two weeks for results from multiple hospitals we received his shocking-diagnosis. My first response was “God, as long as I can hear you and know You are with me, I know I can do this.”

He started long inpatient chemo treatments in Tampa, but within two treatments God was clear that we would be selling our property, and relocating our family of 9 to Collierville, TN to be close to St. Jude, where there were research doctors who had successfully treated ACC a few times.

Micah’s healing is a full spectrum approach. The harsh protocol was important to eradicate the cancer but he needed support to empower him through it. He had a Gtube placed. We fed him liquid hope, breast milk, bone broth, yoursuper mixes and supplements that I felt his body needed. I would have dreams about foods his body required at different times. God had connected us deeply. Others would have dreams for him too. For example, I felt he needed lemon juice and someone had a dream I was feeding him organic lemons! I was reading books about cancer diets, having dreams about what he needed, and the labs would show we were right on. It was very surreal.

I read a few books that changed the way I saw cancer and I realized his entire body and spirit needed to be supported. We weren’t fighting against his confused cells, we were focusing on healing them.  I used essential oils regularly, praying over his body each night to clear his energy from the trauma of the day, exercise, outside and laughter became part of Micah’s treatment plan. We were away from his siblings and Dad for over 120 days, and it was HARD, but we focused on singing and laughing as much as we could.

I looked into Intravenous Vitamin C and mistletoe but while on treatment at St. Jude they asked me to wait. During his last month he was so sick and on several anti nausea meds. We hired Dr. Dagmara Beine, from Zuza’s Way and she helped us dose his THC/CBD, and we worked with Rylie’s Smile from Delaware for better education about cannabis and children. His nausea stopped immediately!! He was able to stop the anti-nausea medicines that same week, during what is suppose to be the hardest last month on daily chemo.

We finished Micah’s treatment of IV chemo, and started the mistletoe and IVC. We work with Dr. Beine on a lifetime approach for Micah, because he has a TP53 gene mutation. It’s not a quick fix or a sprint,  it’s a life journey. The oncologists eradicate the cancer and then send patients home to a wait and see approach. For us that wasn’t an option. We have a full year schedule of healing for Micah and then there are things he’ll do forever to ensure health and wholeness.

Surprising the team each scan, Micah is NED. Before scans they warned us they didn’t think it would be good, but with each scan they came in with smiles and encouragement. They don’t necessarily want to hear in detail all we are doing integrativly and we differ in opinion in areas but we are learning to work together. My passion is to see the integrative and mainstream medical bridge together. It hasn’t been easy and I’ve had to strongly advocate for choices that I knew were the right ones. The bottom line is he is my child and everything I’m doing has low risk and has been proven to be effective in healing and supporting.

I receive a lot of messages from parents who have wanted to explore integrative care but they were told not to. They were told it doesn’t matter what their children eat. My advice to anyone who has a desire to do all you can for your child in regards to integrative care, is to hire an integrative doctor that works with pediatric oncology, find other parents and groups who are pioneering. Read all of the studies. Most importantly push fear aside and find your peace. Your knowingness that you’re doing what’s best for your child is key. Don’t be afraid to disagree with doctors. Oncologists are trained to eradicate the cancer, and that’s a huge part of it but not at all the only goal.

For a while I felt like a salmon swimming upstream (especially in the pediatric oncology world) and I noticed we weren’t alone. Having foundations like Believe Big empowered us to keep going, especially in Memphis where it’s very behind. We needed that community of encouragement and we feel God has been very intentional to give us all that we needed for Micah’s healing journey, and Believe Big was one of those gifts to us.
